Mardi Gras




Louisiana Swamp Cake


1 pkg vanilla cake mix
1 jar caramel topping

1 can sweet condense milk

1 container cool whip
sprinkles or chopped peacans


1. Make cake mix according to package directions. Pour into a 9x12 inch greased pan. Bake for 35-40 minutes.
2. Let cool or 5-10 minutes and then poke holes into the cake (20 or more).
3. Pour the sweetened condensed milk into each of the holes, then pour the caramel topping. Finish off with a layer of cool whip. Finish off with chopped pecans.

*cake can be served warm or cold.

Fried Rice

1 T oil
1 egg, slightly beaten
2 T oil
2 stalks green onion, chopped
3 strips bacon, crispy
1/2 c bamboo shoots
1/2 c frozen peas
4 c rice, cooked
soy sauce
salt and pepper to taste
1. Prepare rice according to package directions. (3 c water to 1 1/2 c rice). Meanwhile cook bacon and chop up vegetables.
2. Heat 1 tablespoon oil and scramble egg, set aside on a plate.
3. Heat 2 T oil with rice, mix in bacon, onion, bamboo shoots, eggs, and peas. Cook until heated through.
4. Add seasonings and soy sauce until color and flavoring is achieved.

Fortune Cookies




FORTUNE COOKIES
6 T butter, melted
1/4 tsp vanilla
2 egg whites
1/4 c sugar
1/2 c flour
Whisk together egg whites, sugar, vanilla, and butter. Add the flour and blend until batter is smooth. On a greased cookie sheet, drop teaspoonfuls of batter and swirl the batter around with the back of the spoon to make a 3 inch circle. Bake at 350F until lightly brown; about 7-8 mins. Remove one cookie at a time, leaving pan in oven. Place fortune in center of cookie then fold cookie in half and pull ends together. Let cool.
