strawberry shortcake



STRAWBERRY AND WHIPPING CREAM:
1 pint strawberries, washed and sliced
up to 1/2 c sugar
Whipping cream
1 tsp vanilla

Put strawberries into a large bowl and add 1/4 c sugar. Mix into the strawberries. Set aside for 20 mins. Take a potato masher and mash them a little. Not to much, just enough to get more juices out of them.

whip the cream, adding a drop or two of vanilla and 1T sugar.

To serve, break up one biscuit per person into big pieces into a bowl. Ladle strawberries over the biscuit. Add a dollop of whipping cream to the biscuit.

BISQUICK BISCUITS:
2 1/3 c baking mix (biscuick)
3 T. butter, melted
1/2 c milk
3 T. sugar

Heat oven to 425F. Stir baking mix, melted butter, milk, and sugar in a mixing bowl until soft dough forms. Drop by teaspoonfuls onto greased cookie sheet. Bake 10-12 mins or until golden brown.
